1. Preheat oven to 375°F.
2. Add tofu and bell peppers to a foil-lined baking sheet. Toss with olive oil, salt, pepper, garlic
powder, and onion powder. Bake for 25-30 minutes or until tofu is browned.
3. Let cool, and cut tofu and bell peppers into smaller pieces.
4. Add tofu and bell pepper pieces to a greased skillet over medium heat. Crack in eggs and
scramble until eggs are cooked through. Remove from heat and set aside.
5. Slice and toast English muffins and spread mayonnaise on all halves. Assemble
the sandwiches by placing the hard salami and egg scramble mix on the bottom
layer of each English muffin. Top with the other halves and enjoy.

1 cup red bell peppers, chopped

1 tsp sea salt
½ tsp pepper

4 eggs
3 English muffins
mayonnaise (to taste)
3 slices hard salami
