1. Preheat oven to 350°F.
2. Season zucchini with salt and pepper. Heat olive
oil in a pan, fry zucchini on both sides, and remove
from heat.
3. Layer zucchini, tomatoes, and feta cheese in a
casserole dish. Top with Parmesan cheese.
4. Whisk eggs and basil in a bowl and pour over
casserole.
5. Bake for 30-35 minutes or until the egg is set.
2-3 zucchinis, cut into ½-inch pieces
1 tsp salt
¼ tsp ground black pepper
1 Tbsp olive oil
1½ cups tomatoes, diced
1 cup feta cheese, crumbled
1 cup Parmesan cheese, grated
6-8 eggs
½ cup fresh basil, sliced
