1. Clean the collard greens, remove stems, and chop
into bite-size pieces.
2. Clean again. Then, add to a large pot. Using your
hands, crush them up to improve texture.
3. Add the remaining ingredients and enough water or
chicken stock to cover everything.
4. Bring to a rolling boil, cover with a loose lid, and
simmer for 6-8 hours.
5. Remove the bones and skin from the turkey and
serve.
4 bunches collard greens
2 smoked turkey legs or wings
1 jar banana pepper rings
½ tsp red pepper flakes
salt (to taste)
pepper (to taste)
water or chicken stock
