1. Preheat oven to 375°F.
2. Make the meatloaf by slightly beating the eggs in a large mixing bowl. Add all the remaining ingredients,
except the meat, mixing until thoroughly combined.
3. Combine meat with the egg mixture.
4. Divide meatloaf in half and gently press into 2 greased loaf pans.
5. Mix the glaze ingredients in a small bowl and spread on top of meatloaf.
6. Bake uncovered for 15 minutes. Reduce oven temperature to 350°F and bake for
45 minutes until the top is golden-brown and not too soft when pressing in the
center.
7. Let cool for 10 minutes and drain fat, if needed.

2 eggs
1 large onion, finely diced
½ green bell pepper, finely diced
½ red bell pepper, finely diced
6 cloves garlic, finely diced
1 cup chicken broth
1 cup seasoned breadcrumbs
2 slices bread, lightly toasted & ripped
into small pieces
2 squirts ketchup
½ tsp dry mustard
2 tsp Italian seasoning
salt (to taste)
pepper (to taste)
garlic powder (to taste)
rosemary (optional)
thyme (optional)
basil (optional)
1½ lbs lean ground beef
½ lb ground pork

1 Tbsp yellow mustard
Worcestershire sauce (optional)
