1. Preheat oven to 350°F.
2. Drizzle baking pan with olive oil. Add zucchini,
squash, mushrooms, and tofu, and mix.
3. Bake for 20-25 minutes.
4. Place tacos shells on oven rack and bake for at least
2-3 minutes.
5. Stuff taco shells with the tofu and vegetable mixture
and top with remaining ingredients.
Vegan Tofu Tacos

¼ cup zucchini, diced
¼ cup squash, diced
¼ cup mushrooms, diced
2 pkgs extra-firm tofu, diced
8 yellow corn taco shells
2 tomatoes, diced (for topping)
½ cup purple or green cabbage, chopped
(for topping)
2 avocados, sliced (for topping)
1 cup salsa (for topping)
2 limes, sliced (for topping)
1 bunch green onions, chopped (for topping)
1 bunch cilantro, chopped (for topping)
1 cup spinach, chopped (for topping)
vegan cheese, shredded (for topping)
2 jalapeños, sliced (for topping)
