Add garlic and stir, lightly frying for about 1 minute. Once golden, transfer to a mixing bowl and allow to cool slightly. 2. Add the tomatoes, balsamic vinegar, basil, salt, and pepper to the bowl. Toss to combine, cover, and refrigerate for 1-2 hours. 3. Then, melt the butter in a large skillet. In batches, toast the bread on both sides until golden-brown, making sure they're nice and buttery. 4. Arrange the toasted bread slices on a large platter. Spoon a generous amount of the tomato mixture over each slice of bread and serve.
