1. Boil water in a medium saucepan. Add rice, cover,
and simmer for about 20 minutes or until cooked.
2. Add milk, sugar, rind, and egg yolks to the
saucepan. Stir constantly until reaching a thick
consistency, about 15-25 minutes.
3. Remove from heat and pour into a large serving
bowl. Set aside and let cool for at least 1 hour.
4. Garnish with cinnamon powder and serve.

1 cup short-grain rice
2 cups hot whole milk
1 cup sugar
½ rind lemon or orange, shredded or shaved
4 egg yolks, stirred
cinnamon powder (for garnish)
