3 bay leaves, wrapped in

9 cloves garlic, finely chopped
4 medium onions, finely chopped
2 red bell peppers, chopped
2 yellow bell peppers, chopped
6 Tbsp chili powder
2 Tbsp Sichuan peppercorns, wrapped in
cheesecloth
2 Tbsp ground cumin
2 Tbsp chipotle chili powder
1½ Tbsp dried oregano
2 Tbsp smoked paprika
2 lbs short rib
1 lb ground Italian sausage
2 cups lager
1 (15 oz) can black beans, drained & rinsed
2 (15 oz) cans kidney beans, drained & rinsed
2 (24 oz) cans crushed tomatoes
2 (24 oz) cans diced tomatoes with juice
lime wedges (for garnish)
crème fraîche (for garnish)
cheddar cheese, shredded
(for garnish)
salt (to taste)
black pepper (to taste)
