1. Preheat oven to 400°F.
2. Make the pesto by pulsing blanched basil leaves, garlic, nuts, and lemon juice in a food processor until
everything has broken down into small chunks. Reduce speed to low and slowly pour in olive oil.
3. Transfer the mixture to a small bowl. Stir in Parmesan cheese and season with salt and pepper.
4. Arrange chicken breasts in a baking dish. Season with salt and pepper and spread
pesto over each chicken breast.
5. Layer tomatoes over chicken and top with mozzarella cheese.
6. Bake for 40 minutes.
