1. Make the garlic soy sauce by mixing soy sauce, rice vinegar, sesame oil, and garlic in a small bowl. Set
aside.
2. Make the pancakes by whisking flour, cornstarch, and salt in a medium bowl. Stir in cold water.
3. Beat in eggs until blended. Stir in shrimp, green onions, and peppers.
4. In a cast-iron or nonstick skillet, heat 1 tablespoon of vegetable oil at a time over
medium heat.
5. Drop in batter, 1 tablespoon per pancake. Cook, turning once, until the top is set
and the bottom is golden, about 6 minutes.
6. Serve hot or at room temperature with garlic soy sauce.

¼ cup soy sauce
4 tsp rice vinegar
2 tsp sesame oil
2 cloves garlic, minced

4 green onions, chopped
2 hot red peppers, seeded
& thinly sliced
2 jalapeños, seeded & thinly sliced
3 Tbsp vegetable oil
