Egg Muffins
1 cup fresh spinach
3 cups egg whites
cheese, shredded (to taste)
salsa (to taste)
avocado slices (for topping)
hot sauce (for topping)

1. Preheat oven to 350°F.
2. Line each cup of a greased 6-cup muffin tin with
spinach.
3. Evenly distribute egg whites over spinach.
4. Add cheese and salsa to each cup.
5. Bake for 30 minutes.
6. Top with avocado slices and hot sauce and serve.
