1. In a large skillet with vegetable oil, sauté ground turkey, chili powder, and half of the diced white onions
until almost browned.
2. Add diced tomatoes and green chilies, pinto beans, and zucchini. Cook for 5 minutes.
3. In a small bowl, toss coleslaw with lime juice and season with salt and pepper.
4. Serve turkey and vegetables on warmed tostada shells and top with coleslaw,
remaining diced onions, sour cream, and shredded cheese.

1 white onion, diced, divided
1 can diced tomatoes and green chilies
1 can pinto beans, drained & rinsed
1 zucchini, diced very small
1 bag coleslaw
3 limes, juiced
salt (to taste)
pepper (to taste)
tostada shells (for serving)
sour cream (for serving)
Mexican-style cheese, shredded (for serving)
