1. Prepare rice according to package directions. Mix in rice vinegar and set aside.
2. Make a glaze by combining honey, soy sauce, and ginger in a small bowl. Set aside.
3. Season pork chops with salt and pepper. Cook in a grill pan with vegetable oil over high heat, about 5-7
minutes on each side.
4. Brush pork chops with glaze and grill for 30 seconds on each side. Transfer to a dish and set aside.
5. Drizzle bok choy with sesame oil and season with salt and pepper. Grill until lightly charred, about 1-3
minutes on each side.
6. Plate rice, pork chops, and bok choy and serve.
