1. Preheat oven to 350°F.
2. Arrange eggplant slices on a parchment paper-lined
baking sheet in a single layer.
3. Brush them with olive oil and sprinkle with salt
and pepper. Turn each slice and repeat the same
process.
4. Roast for 30 minutes, flipping halfway through.
5. Sprinkle with fresh parsley and serve immediately.
1-2 medium eggplants, cut into
½-inch rounds
3 Tbsp olive oil
½ tsp kosher salt
¼ tsp black pepper
2 tsp fresh parsley, chopped (for garnish)
