1. Mix vinegar with olive oil, salt, and pepper in a small bowl. Set aside.
2. In another bowl, mix the goat cheese and fresh herbs.
3. Assemble the toasts by spreading the goat cheese mixture on one side of each piece of bread.
4. Top each with a piece of serrano ham, sliced melon, and alfalfa sprouts.
5. Drizzle with the vinaigrette mixture and serve.

1 melon, sliced thin
1 pint alfalfa sprouts
