1. Beat eggs in a small bowl and season with pepper.
2. Add flour to another bowl and season with pepper.
3. Heat olive oil in a pan.
4. Dip each sliced vegetable in the egg mixture and then the flour.
5. Gently place coated vegetables in the hot oiled pan and cook until tender.
1-2 eggs
pepper (to taste)
½-1 cup flour
2 Tbsp olive oil
1 zucchini, sliced
1 yellow squash, sliced
1 red bell pepper, sliced
1 onion, sliced
