1. Preheat oven to 350°F.
2. In a medium bowl, sift flour, salt, and baking soda. Whisk in cinnamon and sugar. Set aside.
3. Beat eggs in a large bowl. Mix in zucchini, oil, and vanilla extract.
4. Slowly add the dry ingredients to the wet ingredients, stirring to combine. Fold in
nuts and mix until just combined.
5. Divide batter evenly between 2 greased 8x4 loaf pans. Bake for 50-60 minutes,
until a toothpick comes out clean.
6. Cool for 5 minutes, remove from pans, and finish cooling on a wire rack.
2 cups all-purpose flour
1 tsp salt
2 tsp baking soda
1 Tbsp cinnamon
1½ cups granulated sugar
3 large eggs
2 cups zucchini, grated
¾ cup vegetable oil
1 Tbsp vanilla extract
1½ cups pecans or walnuts,
chopped (optional)
