1. Preheat oven to 425°F.
2. Whisk eggs in a bowl and set aside.
3. In a separate bowl, combine breadcrumbs,
Parmesan cheese, onion powder, black pepper, and
¼ tsp salt. Set aside.
4. Add the zucchini to a large bowl. Toss with flour and
remaining salt until well coated.
5. Bread the zucchini by briefly dipping each piece into
the egg, shaking excess, and then coating with the
breadcrumb mixture.
6. Arrange breaded zucchini on a greased baking
sheet and bake until golden and crispy, about 20-25
minutes, flipping halfway through.

1 cup breadcrumbs
1 cup Parmesan cheese, grated
¼ tsp onion powder
¼ tsp black pepper
½ tsp salt, divided
2 Tbsp flour
3 medium zucchinis, cut into matchsticks
