1. Preheat oven to 350°F.
2. Boil the squash and onion in a large pot of water
until tender. Drain and return vegetables to the
warm pot.
3. Stir in the butter and cheese until melted.
4. Mix in remaining ingredients, reserving some
stuffing mix for topping, and pour into a 9x13
baking dish.
5. Sprinkle extra stuffing mix on top and bake for 30
minutes or until bubbly and golden-brown.
3 lbs yellow squash, sliced
1 large onion, chopped
1 stick butter
3 cups cheddar cheese, shredded
1 can cream of chicken soup
1 cup sour cream
3 cups stuffing mix, divided
