1. Preheat oven to 400°F.
2. In a large mixing bowl, toss the potatoes with ¼ cup of olive oil, bacon, shallots, cayenne pepper, salt,
and pepper.
3. Divide the potatoes between 2 sheet pans in a single layer and bake for 20 minutes.
4. Stir the potatoes, rotate the pan positions, and bake for another 20 minutes. Repeat until desired
crispiness is achieved, then remove from oven.
5. Whisk the lemon juice, remaining olive oil, and hot sauce in a small bowl.
6. Pour the liquid mixture over the potatoes and gently toss until potatoes are well
coated.
7. Top with sesame seeds and parsley.

1 pkg bacon, sliced into ½-inch pieces
2 large shallots, minced
1 tsp cayenne pepper
1 tsp salt
¼ tsp pepper
1 Tbsp lemon juice
1 tsp hot sauce
2 Tbsp sesame seeds, toasted
(for garnish)
2 Tbsp parsley, chopped (for garnish)
