1. Combine chicken, onion, wine, beer, and grape juice in a stewing pot on medium heat.
2. Mix in the sofrito, tomato sauce, olives, bay leaves, culantro and achiote
seasoning, garlic salt, and adobo seasoning.
3. Let boil for 10 minutes, then add the potatoes.
4. Keep at a boil until the chicken is tender and the potatoes are soft.
5. Serve with steamed white rice.

1 whole chicken, cut into bite-size pieces
1 yellow onion, peeled & quartered
½ cup red cooking wine
12 oz beer
1 cup grape juice
2 Tbsp Puerto Rican sofrito
8 oz tomato sauce
½ cup Spanish Manzanilla olives, pitted or stuffed with red pimientos
4 bay leaves
1 pkg culantro and achiote seasoning
2 tsp garlic salt
2 tsp adobo all-purpose seasoning
4 yellow potatoes, peeled & halved
white rice, steamed (for serving)
