1. Combine soy sauce, vinegar, garlic, and water in a large bowl.
2. Fully submerge chicken thighs and pork belly in the mixture. Marinate in the refrigerator for at least
1 hour.
3. When the meat is ready, heat the oil in a pot and brown each piece.
4. Pour the marinade mixture in the pot and bring to a boil.
5. Add bay leaves, cover, and simmer for about 20 minutes.
6. Remove the lid, increase the heat to medium, stir in maple syrup, coconut cream,
white pepper, and red chili flakes, and let the gravy thicken.
7. Serve over rice with blanched or pickled vegetables.

2 lbs pork belly, cubed
1 Tbsp cooking oil
2-3 bay leaves
2 Tbsp maple syrup
2 Tbsp coconut cream
white pepper (to taste)
red chili flakes (to taste)
rice, cooked (for serving)
vegetables, blanched or pickled
