1. Bring chicken broth to a boil in a large pot.
Reduce heat and let simmer.
2. Meanwhile, heat the butter in a large
saucepan over medium heat. Add shallots
and garlic and cook until translucent.
3. Add the rice to the saucepan, tossing to
coat. Toast the rice for about 3-5 minutes,
then slowly add the prosecco. Simmer over
medium-low heat until the wine is almost
evaporated.
4. Add the hot broth 1 cup at a time, continuing
to stir until all the liquid is almost absorbed
before adding more.
5. Once all the broth has been added and
cooked into the rice, remove the saucepan
from heat and stir in the Parmesan cheese,
salt, pepper, and paprika.
6. Garnish with fresh parsley and serve.

1½ cups arborio rice
1 cup prosecco
1 cup Parmesan cheese, freshly grated
1 tsp salt
½ tsp black pepper
½ tsp paprika
fresh parsley (for garnish)
