1. Add serrano chilies, tomatoes, garlic, onion, salt,
pepper, and coriander to a blender. Blend well.
2. Add a small amount of coconut oil to a hot pan.
When it's very hot, add the sauce and let it boil.
3. After the sauce has boiled, transfer it to a small
bowl and keep warm.
4. In the same pan, add more oil and fry the tortillas.
Remove the tortillas and set on a large plate.
5. Fry the eggs in the same pan to your preferred
doneness.
6. Place eggs on top of the tortillas and top with sauce.
2 serrano chilies
2 tomatoes
1 clove garlic
⅛ onion
salt (to taste)
black pepper (to taste)
coriander (to taste)
coconut oil (for frying)
2 Mexican corn tortillas
2 eggs
