1. Preheat oven to 375°F.
2. Brown breakfast sausage in a skillet over medium heat.
3. Remove sausage from skillet, reserving grease, and transfer to a lightly oiled pie dish. Sprinkle with
Parmesan cheese and set aside.
4. In the same skillet, sauté onions, mushrooms, garlic, and spinach until very little liquid is left. Add
mixture to the pie dish.
5. Beat eggs in a small bowl. Season with salt, pepper, and hot sauce, and
slowly whisk in milk until well combined.
6. Pour eggs over pie dish, and bake for 20-45 minutes or until eggs are set.
7. Let quiche cool for at least 10 minutes, slice, and serve.
1 lb ground breakfast sausage
½ cup Parmesan cheese, shaved
1 yellow onion, diced
1 pkg mushrooms, sliced
1 tsp garlic, crushed
¼ cup spinach, chopped
3 eggs
salt (to taste)
pepper (to taste)
hot sauce (to taste)
½ cup milk
