Associa Family Cookbook Volume III | 267 1. Make churros by adding water, butter, sugar, and salt to a pan. Heat until it boils. 2. Remove pan from heat and add flour and vanilla extract. Stir until a smooth ball of dough forms. 3. Transfer the dough to a large zip-top plastic bag with a corner cut off. 4. Heat vegetable oil in a deep pan to around 375°F. 5. Squeeze strips of dough into the hot oil, like making long French fries. 6. Fry strips until golden, around 2-4 minutes, turning occasionally. 7. Remove churros from oil and set them on a paper towel-lined plate. 8. Mix sugar and cinnamon in a bowl. 9. Roll the warm churros in the sugar mixture until they're well coated. Set aside. 10. Meanwhile, make the chocolate sauce by heating heavy cream in a small pan until it almost boils. 11. Remove the pan from heat, and add chocolate chips, butter, and a pinch of salt. Mix until melted and smooth. 12. Serve the churros with the chocolate sauce for dipping.
