1. Preheat oven to 350°F.
2. Cook rice according to package directions. Set aside.
3. In a large pan, cook the ground beef. Drain in a colander and set aside.
4. In the same pan, sauté the onions and celery in 8 tablespoons of butter until soft. Remove from heat
and add pine nuts.
5. Add cooked rice and ground beef to the pan. Mix well and season with salt and pepper.
6. Transfer stuffing to a casserole dish. Add remaining butter for moisture and bake
covered for 30-40 minutes.
