1. Preheat oven to 350°F.
2. Bring a large pot of water to a boil. Add baby carrots and cook until soft, about 15-20 minutes.
3. Add hot carrots, butter, and coconut oil to a blender. Blend until smooth.
4. Add sugar, vanilla extract, flour, and baking powder and blend until smooth.
5. Mix in eggs.
6. Pour mixture into a very deep dish and bake for 90 minutes.
