1. Set smoker to 225°F.
2. Generously coat ribs with olive oil on all sides.
3. In a small bowl, combine sugars and all
spices to make a rub. Cake the rub on ribs.
4. Place ribs on smoker, meat-side down, and
cook for about 2 hours.
5. Remove ribs and place them on a sheet of
greased aluminum foil.
6. Pour apple juice over the ribs. Wrap with
another piece of aluminum foil to make a tight
package.
7. Return ribs to smoker and cook for about 1½
hours, meat-side down.
8. Remove ribs from smoker and discard
aluminum foil.
9. Return ribs to smoker, bone-side down. Coat
with barbecue sauce and cook for 30 minutes.
10. Remove from smoker and enjoy.

2 cups dark brown sugar
¾ cup granulated sugar
1 cup kosher salt/sea salt mix
¼ cup onion powder
¼ cup chili powder
1 Tbsp chipotle chili powder
½ cup garlic powder
2-3 Tbsp black pepper
1 tsp ground clove
1 Tbsp cayenne pepper
¼ tsp celery salt
1 tsp smoked paprika
⅛ tsp dried basil
⅛ tsp dried thyme
½ cup apple juice
barbecue sauce (to taste)
