1. Make the dressing by combining all the dressing ingredients in a blender. Pulse 2-3 times, shake,
and repeat until smooth. Set aside.
2. Make the salad by grilling the corn, zucchini, and chicken breasts. Let cool and
remove corn from the cob, dice the zucchini, and cube the chicken.
3. Add grilled ingredients, arugula, black beans, and tomatoes to a large bowl.
4. Pour dressing over salad, toss well, and serve.

Cilantro Jalapeño Ranch Dressing
1 cup low-fat buttermilk
2 Tbsp mayonnaise
¼ cup nonfat Greek yogurt
1 Tbsp lime juice
½ tsp garlic, minced
1 jalapeño, seeded & diced
½ cup fresh cilantro
1 shallot, minced
½ tsp sea salt
fresh ground pepper
Salad
2 ears corn
1 large zucchini
2 chicken breasts
5 oz arugula
1 (15 oz) can black beans, drained & rinsed
½ cup grape tomatoes, halved
