1. In a small bowl, prepare the Italian dressing according to package directions using oil, vinegar, and
water. Mix in taco seasoning.
2. Add the remaining ingredients to a large bowl. Pour dressing over top, toss to combine, and serve
immediately.
1 pkg Italian dressing mix
oil (to taste)
vinegar (to taste)
water
1 pkg taco seasoning
1 can dark kidney beans, drained
1 can light kidney beans, drained
1 can garbanzo beans or
chickpeas, drained
1 can black beans, drained
1 can corn, drained
1 medium purple onion, chopped
1 jalapeño, seeded & chopped
1 red sweet pepper, chopped
1 yellow sweet pepper, chopped
1 green sweet pepper, chopped
