SOUPS & SALADS
1. Add tomatoes, sweet potatoes, cucumbers, red onion, and Kalamata olives to a large bowl.
2. Drizzle with olive oil and season with salt. Mix well.
3. Stir in vinegar.
4. Top with feta cheese and parsley.
